Mimosas were popular among the roaring 20's group in Paris and London. As simple as it is elegant, it is a delightfully bubbly and refreshingly citrus filled drink. It is now a staple brunch beverage that is simply 3/4ths orange juice and 1/4th champagne, but the orange juice could be substituted for Ruby Red Grapefruit juice, and still be as wonderfully fruity as a regular mimosa.
