A Drink Fit For a King


The Ren Faire in Irwindale is going on, it is every Saturday and Sunday until May 22 from 10am to 7pm. It's full of arts and crafts, and full of family fun for all ages. Mead, or honey wine, is the oldest alcoholic drinks known to man. It is made from honey and water via fermentation with yeast. It may be still, carbonated, or sparkling; it may be dry, semi-sweet, or sweet. If you've ever wanted to sip on what kings and queens had a taste of, or need something to pair with that turkey leg or mutton then here is a recipe for all of your Game of Thrones viewing party needs after the joust is over.

  1. 1 Gallon Water

  2. 3 lbs Honey (1 quart)

  3. 1 Lemon

  4. 12 Cloves

  5. 1 cup strong tea

  6. Epernay II yeast

Add the honey to one gallon of boiling water. Turn off the heat and stir well. Slice or juice the lemons and add along with the clove and tea. Let stand covered until cool. Pour into a gallon jug and add the yeast. Epernay II yeast works very well, but champagne yeast or ale yeast are also fine. Let it ferment for 18 days, and then siphon into bottles. Seal or cap the bottles and let sit at room temperature for two weeks, then put in the refrigerator.
